I've had several players roll psionics recently and we've been brainstorming some ideas that seem rather interesting.
Two of them would be hydrokinesis and geokinesis which we've always been sort of disappointed wasn't in the game. I figure mechanically we could just treat it like telekinesis that only works on water or earth, but I also think it should have some other added benefit since you are basically limiting your options here.

One of the obvious ways to do this I think would be to increase the carrying capacity with the power, but I'm not sure by how much.

But there could be more creative options as well. In the case of geokinesis maybe you could pull off some kind of vibration attack simulating earthquakes or something.

Also attacks could be made as chemical power or telekinesis depending on the situation.

These are good ideas, Ryxis, and I agree that you would probably want to up the formula (total Capacity) since you're narrowing the scope of what the power can do.

For some excellent ideas on Psioncs powers, check out the following game.  It was made by a former V&V player (Craig Griswold) and is essentially the West End Games d6 Star Wars game redone for the modern/horror/thriller genre.  You can find it here.

There are already a few threads with ideas for Psioics posted, and several modules have options for both earth and water control powers as well as some home brew rules posted here. You'll have to do a search for them though.
